Handy tip:
After marriage, a girl goes through lot of changes in her
life right from the environment to food habits. She either learns new things or
she will adapt to their in-laws style of living. I have learned couple of recipes
which I am sharing with you all foodies. Aloo sev ki sabzi is one of the inventions
of my mother in law. It is one of the variant of sev tamatar ki sabzi. It can
be served with plain paratha or methi ka thepla. But remember, this dish needs
to be served hot.

4 big boiled potatoes cut into cubes shape
2 cups curds (dahi)
1 cup sev (thick sev used in sev poori )
1/4 tsp mustard seeds (rai / sarson)
5 to 6 fenugreek (methi) seeds (Optional)
1/2 tsp cumin seeds (jeera)
1/2 tsp asafoetida (hing)
1/2 tsp turmeric powder (haldi)
5-6 pieces of green chillies
3-4 curry leaves
3 tbsp chopped coriander (dhania)
1 tbsp oil
1 tbsp dhaniya-jeera powder
salt to taste

1/2 tsp asafoetida (hing)

Water as needed
Method:
- Mix the mustard seeds, fenugreek seeds, curry leaves, green chillies, cumin seeds and asafoetida in a kadai pan.
- Heat the oil and add the seed mixture.
- When they crackle, add the boiled potatoes.
- Add turmeric, dhaniya-jeera powder, salt and stir for some time.
- Add the curds, water as need and mix well.
- Add the coriander and bring to a boil.
- Add sev and switch of the gas before mixing well.
Handy tip:
- If it is sour, add 1 tsp of sugar and serve.
